Notes

A native of Lyon, Jean Baptiste Bruyerin was doctor to both François I and Henri II. The De re cibaria, which Bruyerin spent over thirty years compiling, not only discusses most of the ingredients common to Renaissance cooking but provides a rare window onto the kitchens and dining tables of the early sixteenth-century French court.
